Enzo, innovation as a signature in the world of patisserie

My name is Enzo, and my passion for pastry-making began at the age of 15. After seven years of rigorous training I had the honour of winning the French Dessert Championship, a significant recognition of my commitment to the art of pastry-making.
My career path led me to the laboratories of palaces such as the Plaza Athénée and the Shangri-La, where I gave free rein to my creativity.
In 2017, I began to take an interest in 3D printing, an innovation that has revolutionised the way I design my pastries in this palace on Avenue Montaigne.

My interest in 3D printing has had a profound effect on my approach to pastry-making.
Cette innovation m’a permis d’élargir considérablement les possibilités créatives et techniques de mes créations, tout en donnant un nouvel élan à ma carrière grâce à des
unique, personalised designs.

Manon, inspired by her encounters with some of the great names in patisserie

As for me, I plunged into the world of pastry-making at the age of 24, following a career change that enabled me to discover all the wonderful facets of the profession, from shop sales to Michelin-starred restaurants and luxury hotels.

Meeting Enzo, in my first year of CAP marked the beginning of our adventure together, from Besançon to Paris, then to Geneva , where we worked in the world of luxury luxury patisserie at Woodward and Beau-Rivage.
